For those with an egg allergy or vegan, this is perfect. I’ve tried cashew mayo which leaves a grainy texture on coleslaw, but this is truly smooth. Tastes delicious and the flaxseed mean it’s packed with omega 3’s.

I love that these are golden. They have a lovely fresh taste and go well with the spring onion salsa, guacamole and coleslaw.
Putting an almond crust on fish hadn’t occurred to me before, but this really works. Choose a firm white sustainably sourced fish.
