For those with an egg allergy or vegan, this is perfect. I’ve tried cashew mayo which leaves a grainy texture on coleslaw, but this is truly smooth. Tastes delicious and the flaxseed mean it’s packed with omega 3’s.

You can add to this what you like. Experiment with herbs or garlic. Replace the vinegar with lemon juice. Add lemon zest. But as it is it livens up any salad. And did you know adding oil to vegetables helps you to absorb more nutrients! Win win.

A food processor is essential here. It can be made by hand but will take you 20 minutes as opposed to about 3! Plus you will have one arm like Popeye. Note it is important to use small eggs or the ratio with the oil won’t work.
