These beat any shop bought scotch pancake, and you can't tell they're gluten free. Once you get the hang of it you can make these in 10 minutes from store cupboard ingredients. You can even make low carb banana pancakes, see ingredients below.

Instructions
  1. Put the teaspoon of oil into a small frying pan. Use a piece of kitchen roll to wipe the oil around the pan and retain the oily kitchen roll to grease the pan between pancakes. Heat the pan to smoking hot.
  2. Melt the butter in a jug in the microwave for a few seconds.
  3. Add the flour and baking powder, then the egg. Adding the milk a little at a time stir vigorously with a fork to create a smooth runny paste.
  4. When the pan is smoking pour some mix into the centre of the pan. Once settled it should be about 15 cm diameter.
  5. Cook until you start to see the bubbles bursting and leaving holes in the surface, after about one minute.
  6. Then flip using a spatula. It will puff up at this stage. Cook for a minute or so more until firm then transfer to a warm plate.
  7. Using the oily kitchen roll, wipe the pan to grease again, don't burn your fingers! Then repeat the process until all the mix is used.
  8. For banana pancakes: Mash the banana to a smooth paste. Add the egg and baking powder and beat until well combine. Add smaller amounts to the pan and cook on a lower heat. They take a bit longer each side. And flip carefully.

Recipe Notes

Use rice syrup instead of sugar, with a squeeze of lemon. Or warm the fructose free chocolate sauce pot to pour over.
