It took me a while to get this veggie burger right. The texture is better due to the buckwheat flour and the ground flaxseed. They are also packed with flavour as well as vitamins and minerals.

Instructions
  1. Boil the sweet potato for 20 minutes. Drain and mash.
  2. Boil the brocolli until soft and mash into the sweet potato. Allow to cool
  3. Add all the other ingredients.
  4. Pre heat the oven to 200 fan, 220 electric or Gas 7.
  5. Coat a baking tray with a thin layer of oil.
  6. Form burgers and place on baking tray.

  7. Bake for 20-30 minutes, turning once halfway through.
